Notes from Travis: Pinot Noir and Chardonnay from Peramangk Country, Adelaide Hills, SA. My first effort at pet nat and I think this is a banger. Looks cloudy in the bottle as there was no disgorging of the wine. Really happy with the 50 / 50 blend of Chardonnay and Pinot here. The varieties were hand picked and direct pressed together, settled in stainless and co fermented. The wine was bottled just prior to the end of primary ferment. To be honest I wasn’t 100% sure if it would fizz, but a couple months after making it we opened one and it was pretty spot on. 90 cases made.
